orange glazed cardamom shortbread cookies

Over Thanksgiving this year, I made Food52’s Orange Cardamom Sweet Potatoes. These were weirdly one of the favorites on the table out of everything we made this year! The flavors of orange and cardamom marry beautifully and brought in some very festive flavors. These cookies are something I thought of right after because I figured if they work in a vegetable, well then they must work in a cookie. If you’re not already convinced, I don’t have a good photo because my dog ate them all! These cuties are also available in my holiday cookie boxes still available for order!

Yields: 12 cookies

Bake time: About 1 hour

Ingredients

Shortbread

  • 1 cup of unsalted butter, softened

  • 1/2 cup of powdered sugar

  • 1 teaspoon of ground cardamom

  • 1 3/4 cup of all-purpose flour

Glaze

  • About 1/2 cup of powdered sugar, more as needed

  • Splash of whole milk, more as needed

  • Zest from 1 small orange

Instructions

  • Preheat your oven to 325 degrees and prepare a baking sheet with parchment paper

  • Cream together the sugar and softened butter until smooth

  • Slowly incorporate the dry ingredients being careful not to over mix, the dough will be clumpy

  • Gather the dough crumbs and press together until you form a disk, cover with plastic wrap and refrigerate for 30 minutes

  • Once the dough as finished chilling, place the disk in-between two sheets of parchment paper and roll out into a flat surface

  • Using any cookie cutter you desire, begin pressing out your cookie shapes, gathering dough scrapes and re-rolling to use as much of your dough as possible

  • Place shaped cookies onto baking sheet and freeze for 15 minutes

  • Bake the cookies for about 20 minutes, but set a timer for about half way through to keep an eye on them

  • Let the cookies cool on the baking sheet for about 2 minutes, and then transfer to a wire rack to cool completely

  • While the cookies are cooling, make your glaze! Combine the powdered sugar with a splash of milk and whisk together adding more of each ingredient until you reach your desired consistency

  • Mix in the orange zest

  • Carefully dip the top of your cookies into the glaze and transfer back to the wire rack to rest

  • Top with more orange zest if desired, and enjoy!
