peppermint hot cocoa cookies

Hot chocolate is no doubt the top dessert this time of year, but I always struggle wanting hot chocolate and not being willing to give up my daily cookie fix. So…these cookies bring the two together! My ideal hot chocolate is rich, topped with melty marshmallows, and has a hint of peppermint. These cookies are just that and are the perfect treat to make this holiday season. Peppermint hot cocoa cookies

Yields: About 16 cookies

Bake time: 1 hour

Ingredients

  • 1 1/2 cups of all purpose flour

  • 3/4 cup of cocoa powder

  • 1 teaspoon of baking powder

  • 1 teaspoon of salt

  • 1 cup of brown sugar

  • 1 stick of unsalted butter, softened

  • 2 eggs

  • About 1 cup of mini marshmallows

  • Crushed peppermint for sprinkling

Instructions

  • Preheat your oven to 375 degrees

  • Whisk together flour, cocoa, baking powder, and salt in a medium bowl; Set aside

  • Beat butter and sugar in a large bowl until smooth; Add eggs one at a time until incorporated

  • Using a rubber spatula, gradually add the flour mixture to the wet ingredients mixing until no more flour streaks are visible (Note: The dough will be thicker than normal cookie dough, that’s what we want!)

  • Form dough into balls using a cookie scoop and press your thumb into the center to make a crater; Push 3ish marshmallows in the center and spread the dough to cover the hole

  • Place marshmallow-filled dough balls onto a parchment lined baking sheet and transfer to the fridge to chill for 30 minutes

  • Meanwhile, crush peppermints or candy canes in a ziplock bag; Once the candy is fine enough, transfer to a small plate and spread evenly

  • Remove dough from the fridge and roll each ball through the peppermint plate until coated on the top with candy

  • Press a couple of extra marshmallows on each ball to adhere to the dough

  • Bake cookies for 10 minutes; Cool on the baking sheet for about 5 minutes

  • Serve with milk or eggnog and enjoy!
