chocolate chip sprinkle cookies
While rainbow sprinkles may not scream “holiday” to some, these cookies are actually a nod to a special holiday memory of mine. With my wedding anniversary coming up this month, these cookies are an ode to my spectacular three-tiered chocolate wedding cake with rainbow sprinkles. People questioned my decision to have such a different cake than the overall “vibe” of my wedding, but I was only concerned with getting to have chocolate and sprinkles on my day and guess what? It literally tied the whole thing together and is the one detail people are STILL talking about today. So I give you my Chocolate Chip Sprinkle Cookies for a holiday treat, and while rainbow sprinkles are preferred, I went ahead and called for a mixture of rainbow, red, and green to give them an extra holiday flare. Enjoy!
Chocolate chip sprinkle cookies
Yields: About 14 cookies
Bake time: 1 hour
Ingredients
1 cup of flour
1/2 cup of brown sugar
1 teaspoon of baking soda
1 teaspoon of salt
1 stick of unsalted butter, softened
2 eggs
Splash of vanilla extract
1 cup of chocolate chunks
1/2 cup of red and green sprinkles
1/2 cup of rainbow sprinkles
Flaky salt to finish
Instructions
Line a baking sheet with parchment paper and preheat your oven to 350 degrees
Combine flour, baking soda, and salt in a medium bowl, set aside
Beat sugar and butter together until fluffy
Incorporate eggs into sugar/butter mixture one at a time and then add the vanilla
Gradually add the flour mixture to the wet ingredients
Fold in chocolate chips and sprinkles with a rubber spatula
Shape dough into tablespoon sized balls and place on a parchment lined baking sheet (top with extra chocolate chunks if desired), chill in the fridge for 30 minutes (you don’t have to do this part, but I find it allows the cookies to keep their shape when baking)
Bake for 11 minutes and sprinkle with flaky salt while cookies are warm
Let them cool for a couple of minutes, then serve and enjoy!
