While planning for Thanksgiving dinner is an important step during this time of year, I’m more concerned with breakfast the next morning. This Pumpkin Crumb Cake is the coziest dessert after the big turkey day meal, but it also pairs even better with a cup of coffee the next morning. It comes together with a few simple ingredients and a homemade crumble topping with a hint of saltiness + crunch, and it is the perfect finale to autumnal flavors as we head into peppermint season. Ingredients

Crumb Topping:

  • 1 cup all-purpose flour

  • 1/2 cup brown sugar

  • 1/4 cup granulated sugar

  • 1 tsp ground cinnamon

  • 1/4 tsp salt

  • 1/2 cup unsalted butter, melted

Icing:

  • 1/2 cup of powdered sugar

  • 1.5 tablespoons of milk

Cake:

  • 1 1/2 cups all-purpose flour

  • 1 tsp baking powder

  • 1/2 tsp baking soda

  • 1/2 tsp salt

  • 1 tsp ground cinnamon

  • 1/2 tsp ground nutmeg

  • 1/4 tsp ground cloves

  • 1/4 tsp ground ginger

  • 1/2 cup unsalted butter, melted

  • 3/4 cup granulated sugar

  • 1/2 cup brown sugar

  • 2 large eggs

  • 1 cup pumpkin purée

  • 1 tsp vanilla extract

  • 1/4 cup milk

Instructions

Make the Crumb Topping:

  • In a medium bowl, whisk together the flour, brown sugar, granulated sugar, cinnamon, and salt.

  • Pour the melted butter over the dry ingredients and mix until mixture comes together. Set aside.

Make the Icing:

  • Whisk powdered sugar and milk until combined, adding more milk as needed to reach a drizzle consistency

Make the Cake

  • Preheat your oven to 350° and grease a 9x9-inch baking pan or line it with parchment paper.

  • Mix dry ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and spices

  • In a separate bowl, beat the melted butter, granulated sugar, and brown sugar until light and fluffy; Beat eggs in one at a time until incorporated; Mix in pumpkin and vanilla until mixture is smooth

  • Gradually add the dry ingredients to the wet alternating with the milk (avoid over mixing)

  • Evenly spread cake batter into prepared pan and sprinkle crumb topping

  • Bake for 40 minutes or until a toothpick comes out clean

  • While still warm, drizzle icing over the top of the cake

  • Serve and enjoy!
