simple quiche

I have recently become obsessed with making quiches. Whether it’s fulfilling client orders or just trying to clean out my fridge, a quiche is definitely a comfort dish for me and the best part is they are completely customizable to what you have on hand! Some people may prefer frittata, but why not just take it a step further with a buttery, flaky crust to take your breakfast (or lunch or dinner) to the next level? My simple recipe is below, and I hope you enjoy!

Yields: 1 9-inch quiche

Cook Time: 1 hour 30 minutes

Ingredients

  • 3 eggs

  • 1 1/4 cup of half and half or milk

  • Any items you have on hand for the fixings: ham, gruyere cheese, chives, leeks, onions, mushrooms, etc.

  • 1 unbaked pie crust (I recommend using Alison Roman’s Only Pie Crust)

  • Handful of parsley or chives for sprinkling

  • Salt and pepper to taste

Instructions

  • If you’re making your own pie crust, follow the instructions to make and lay into a 9-inch pie pan; Chill in refrigerator while you prep your filling

  • Preheat your oven to 425 degrees

  • Combine eggs and milk in a large bowl with a whisk or immersion blender; Season generously with salt and pepper

  • Remove pie crust from refrigerator and sprinkle in your toppings of choice (if you’re using ingredients like leeks or onions, sauté in a pan for a few minutes until tender; For all other toppings like ham or cheese, just sprinkle right into the crust)

  • Pour egg mixture over your toppings and sprinkle with herbs

  • Bake in the oven for about an hour or until the eggs are set and the crust as reached a golden color

  • Cool before slicing, serve, and enjoy!
