simple quiche
I have recently become obsessed with making quiches. Whether it’s fulfilling client orders or just trying to clean out my fridge, a quiche is definitely a comfort dish for me and the best part is they are completely customizable to what you have on hand! Some people may prefer frittata, but why not just take it a step further with a buttery, flaky crust to take your breakfast (or lunch or dinner) to the next level? My simple recipe is below, and I hope you enjoy!
simple quiche
Yields: 1 9-inch quiche
Cook Time: 1 hour 30 minutes
Ingredients
3 eggs
1 1/4 cup of half and half or milk
Any items you have on hand for the fixings: ham, gruyere cheese, chives, leeks, onions, mushrooms, etc.
1 unbaked pie crust (I recommend using Alison Roman’s Only Pie Crust)
Handful of parsley or chives for sprinkling
Salt and pepper to taste
Instructions
If you’re making your own pie crust, follow the instructions to make and lay into a 9-inch pie pan; Chill in refrigerator while you prep your filling
Preheat your oven to 425 degrees
Combine eggs and milk in a large bowl with a whisk or immersion blender; Season generously with salt and pepper
Remove pie crust from refrigerator and sprinkle in your toppings of choice (if you’re using ingredients like leeks or onions, sauté in a pan for a few minutes until tender; For all other toppings like ham or cheese, just sprinkle right into the crust)
Pour egg mixture over your toppings and sprinkle with herbs
Bake in the oven for about an hour or until the eggs are set and the crust as reached a golden color
Cool before slicing, serve, and enjoy!
