When the temperature dips below 50° in Texas, this Spicy Tortellini Soup is my go-to dinner. It’s the perfect comfort food to warm you up on those chilly evenings. The combination of spicy sausage and cheesy tortellini creates a rich, hearty bowl that brings all the cozy vibes. This soup is the kind of dish that makes the months after the holidays feel a little less gray, offering just the right balance of heat and comfort in every spoonful. Recipe below, enjoy!

Yields: 6 servings

Cook Time: 30 minutes

Ingredients

  • 2 tablespoons of olive oil

  • 1 pound of ground hot Italian sausage

  • 1 large yellow onion, chopped

  • 2 garlic cloves, minced (use more if your cloves are small)

  • 2 tablespoons of flour

  • 1 teaspoon of dried basil

  • 1 teaspoon of oregano

  • 1 teaspoon of salt

  • Freshly cracked black pepper

  • 1/2 teaspoon of mustard powder

  • 1/4 teaspoon of red pepper flakes

  • Dash of preferred hot sauce (I use Chaloula)

  • 48 oz container of low sodium chicken broth

  • 1 cup of white milk

  • One bunch of kale or a few handfuls of spinach (I prefer kale)

  • 1 bag of frozen tortellini

Instructions

  • Heat a drizzle of olive oil over medium heat in a large dutch oven or pot; Add onion and sausage breaking meat apart and cook until no longer pink, 5-7 minutes; Drain any fat before moving on to next step

  • Add garlic and cook for about 30 seconds or until fragrant

  • Sprinkle flour over onion and meat to thicken the mixture, cook for about a minute

  • Add all spices and the hot sauce to the mixture and stir to combine

  • Pour chicken broth into pot (use about 3/4 of the container, saving the rest in case you decide to add more before serving)

  • Gradually add milk to the pot; Bring to a boil

  • Once the soup comes to a boil, reduce to a simmer then add kale and tortellini

  • Simmer over medium-low heat until tortellini is cooked through (about 3 more minutes); Taste and season as needed

  • Distribute into bowls and serve!
